Green Beans

1 to 1 ½ lbs fresh green beans, washed and dried with ends trimmed

Olive oil

½ tsp kosher salt

2 cloves garlic, sliced thin



Cooking spray or canola oil

½ C. breadcrumbs (panko, plain, or Italian-seasoned)

1/4 cup ketchup

2 tablespoons grated Parmesan cheese

1 tablespoon Dijon mustard

½ tsp garlic powder

½ tsp onion powder

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

3 ounces cheddar cheese, diced into ¼” cubes

1 large egg

1 to 1 ¼ lbs ground beef (85% lean)



¼ C ketchup

1 Tbl yellow mustard

1 Tbl brown sugar

½ tsp garlic powder



1. Preheat oven to 425°. Ensure there are two oven racks positioned as close to the middle as possible.

2. Wash, dry and trim green beans. Slice garlic. Place on a large rimmed baking dish, drizzle with olive oil and salt, mix thoroughly with hands and spread into an even layer.

3. Line a large rimmed sheet pan with aluminum foil and spray or lightly oil.

4. In a large bowl, combine all meatloaf ingredients except meat until well mixed.  Then, add meat and use hands to mix thoroughly.  Shape into 4-5 mini-loaves approximately 1” thick and place on prepared sheet pan.

5. Mix topping ingredients separately and spoon or brush over loaves (it should be a nice thick layer of sauce).

Place loaves in the oven on the lower of the two racks.  After 10 min, add green beans on the upper rack.  Roast for 8 min, then turn over/stir green beans. Cook meatloaves for additional 7 min (25 min total), remove and rest for 5 min before serving.  Check green beans for doneness when you remove the meatloaves.  Continue cooking while meatloaf rests, if neede
